Vegan Challenge

After last weeks wardrobe challenge, I am onto something completely different. This week I am challenging myself to go vegan. I was inspired by Diana of our.city.light’s inspirational story, and through this story discovered the wonderful gluttonous vegan blog.

I’m veggie already and love vegetables, but I’ve been getting a bit lazy in terms of cooking recently. I used to cook a lot, but recently I’ve let/made Dave do the cooking quite a bit, and he likes to make British classics like bangers and mash and toad in the hole, so I’ve been eating a lot of starch and butter. We’ve also been eating quite a lot of things like frozen pizza and I basically want to get back into cooking with as many veg as possible again.

I decided that I was going to do this challenge a couple of weeks ago, but had to wait because I had restaurant meals planned. But taking that decision had already had a positive effect on my diet as I’ve been ‘practicing’ some of the yummy meals I will have this week. As of yesterday I’ve been completely cutting out all diary and eggs.

We went shopping on Sunday and this is our shopping list – ignore the butter and mince, which is basically Dave trying to de-veganise the dishes I am going to make! I’ve planned all my meals for the week, because I know that if I have to think about what to cook at short notice, I’ll probably let the vegan-ness slip. I’ve made big batches of baba ganoush and humous for my work lunches already. So much nicer than the cheese and cucumber sandwiches I usually have.

Incidentally, the illustrated shopping list is part of another challenge I’m doing – to work through some of Kerri Smith’s 100 ideas, thanks to ana b. of on dressing up. ‘Illustrate your Grocery list’ is no. 26. I’m not committing to doing them all, but expect to see photos of my attempts at some of them soon!

    Like you I am a vegetarian. I have been experimenting with Vegan Tuesday, but am finding that a lot of what I cook during the week is vegan (except for the sweet things). Its a step by step process for me. But good luck to you on your quest.
