Happy Easter everyone! For non-Christian me the day is mainly marked by cracking into some delcious chocolate bunnies and eggs, so what better way to celebrate on the blog than by showing you some pictures of our recent baking endeavours?
A giant cupcake using this recipe. I don’t know if I’ve mentioned this already, we are going to have a giant cupcake as our wedding cake so we have something to cut. This is my second attempt and much much better than the first one, which was just using the normal cupcake recipe, which was nowhere near ‘risey’ enough. This one on the other hand was super risey – with 8 eggs, self raising flour plus extra baking powder you’d expect nothing less! I’m very happy with it, it was nice and moist and spongey. The next one I’ll make I’ll put chocolate pips in and ice it too – I couldn’t be bothered this time.
Mississippi Mud Pie, made by Dave using this recipe. I went to work in the morning and this recipe was on the BBC homepage – I just new he was going to have made it by the time I got home. One of the benefits of having a temporary homemaker boy!
Lemon cupcakes with pinkey icing. No story to this, and I can’t even remember when I made these. Hhmmm. I’m sure they were nice though!
