More baking today. I got the Lola’s cookbook out of the library the other day. Actually never heard of that bakery, but I was hanging around by the cookbooks waiting for Dave to check out Milo’s books and it looked interesting, so I took it home. Milo and I made these that afternoon, they are lovely and moist and not too sweet. Also, Dave got that vanilla bean paste for his custard tart a while back, it’s a revelation! Not as alcoholly as essence and more vanillaey than vanilla sugar.

This is also the first time in my life I’ve found that a recipe makes more than it says it will. Usually I get 10 cupcakes out of a 12-er recipe if I’m lucky, this time I got a full 12 tray of big ones, plus a full tray of mini ones as well.

2 eggs
180g caster sugar
100ml sunflower oil
1 teaspoon vanilla bean paste
2 large bananas, mashed
185g plain flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon

Beat egg and sugar together until light and fluffy.
Add oil, vanilla bean paste and mashed banana and mix
Sift in flour, bicarb and cinnamon a bit at a time and mix until just combined. Don’t overmix.
Pour into muffin cases, filling to two thirds full, or a bit more if you don’t mind them rising a bit higher.
Bake in a preheated over at 180 degrees/gas for 20-25 minutes

60g butter
1 teaspoon vanilla bean paste
200g icing sugar
400g full-fat cream cheese

Didn’t ice them because no cream cheese, so can’t vouch for that part of the recipe!

Beat butter until soft.
Add vanilla paste and sift in icing sugar a bit at a time
add cream cheese and beat at high speed for 30 seconds until smooth and glossy. Don’t overmix
